I have a 2010 MBP with a 1 TB hard drive loaded with my stuff. I want to build a new hackintosh laptop. Is there a way to get this HD to work without reformatting it, and going through all the steps of building one from scratch?

Yes, It's possible for Macbook users because Mac book already have either hfs or apfs partition. so, you can straightly installed on the existing partition or resize the free space from the existing partition and create new and install them to make a fresh installation. After then once the installation is complete, delete the old operating system data completely from the filesystem(don't forget to copy the documents before deleting it). Then, your system will be completely new like a newly purchased Mac Book Pro.
